Upgraded EcxellentCrates to 26.1.2. This is the paper build that I have tested it on, and it seems to work just fine. This version of the plugin will require Java 25

Working upgrade. Changed nightcore version, upgraded spigot dependency, jar version and maven build plugin. Now requires Java 25
