Outreachy Proposal: Update monitoring.md to remove outdated notes

Hi @StefanoSeppi,

I’m an Outreachy applicant for the monitoring infrastructure project. I’ve been exploring the infrastructure-v2 repository and noticed that monitoring.md has some outdated sections that could confuse new contributors:

• Lines around 82: “NOT MORE TRUE, JUST NEED TO ADD …”
• Lines around 99: “** NOT NEEDED ANYMORE, SERVICEMONITOR ALREADY IN RABBIT’S VALUES.YAML **”

I’d like to help update the documentation to reflect the current setup. Before I start, could you confirm:

1. Is the ServiceMonitor for RabbitMQ now fully managed via Helm values (so the old manual step should be removed)?
2. What is the current recommended way to configure Service/Pod monitoring? (The “NOT MORE TRUE” section seems to refer to changes in the Prometheus operator, I want to make sure the new instructions are accurate.)

If this is helpful, I can prepare a pull request with the updates. Also, if there’s a higher-priority task you’d prefer I focus on, please let me know.
