Support policytests operator `addrOf` and `offsetOf` for policy template

In the context of #4990, i added some new tests: d31d46d#diff-833818c7d93a15db3887e7b95e02ba9c5b51bebb85e284da640cb273c3b4917fR259

Since they need to be able to template the policy yaml with the offset and address of a symbol from a loaded elf file, right now i could not implement them as policytests.

It would be great to support that.
